6 pork chops, 3/4-inch thick flour for dredging salt and freshly ground black pepper to taste 2 tablespoons oil 1/4 cup finely chopped onion |
2 tbsp. capers 1 green pepper, finely chopped 1 cup hot beef stock or bouillon 1/4 cup dry white wine parsley for garnish |

| Dredge the pork chops with flour which has been seasoned with salt and pepper. Heat the oil in a skillet and brown the chops on both sides. Remove the chops and add the onion and green pepper. Cook, stirring, until the onion is wilted. Return the chops to the skillet and add the stock and wine. Cover and cook slowly over moderate heat 40 minutes. Add the capers and cook, uncovered, until thoroughly done, about 15 minutes longer. Serve garnished with parsley. |
