1 eggplant 1 or 2 cheddar cheese (add as much as desired) |
1 can mushroom soup |

Instructions: |

Cut eggplant in half. Put one layer in dish and top with half of mushroom soup and cheese. Put other half of eggplant on top and add rest of mushrooom soup and top with cheddar cheese. Bake at 350 degrees for 20-25 min. or until done. |
