8 oz. flour 1/2 tsp. salt |
4 oz. butter 2 oz. castor sugar |

Grease a shallow tin 10x7 inches or an 8-inch sandwich tin. Soften the butter in a mixing bowl. Sieve in the flour and salt, add the sugar. Rub the butter into the dry ingredients. Continue rubbing in, press and knead until a pliable paste is formed. Press the mixture evenly into the tin, using a flat bladed knife to smooth the surface. Prick well with a fork. Bake for 30-35 minutes, 330 degrees, middle shelf. Leave in the tin and when almost cold, cut into pieces. Cool on a cake rack and store in an airtight tin. |
