1-1/2 to 2 C. hot cooked Sweet Potatoes 1/2 C. Sugar 1 tsp. Vanilla Chopped Nuts (optional) 1/4 C. Butter 1/2 tsp. Cinnamon |
1/2 tsp. Rum Flavoring 1 unbaked Pie Shell 3/4 C. Miniature Marshmallows 1 tsp. Nutmeg 2 Eggs |

Combine sweet potatoes, butter and marshmallows, stir until butter and marshmallows are melted. Add sugar, spices and flavoring. Add eggs, beat well using electric mixer. May add about 1/4 C. milk if mixture is too stiff. Sprinkle nuts in pie shell, pour in filling. Bake in preheated oven at 350 degrees for 50 to 60 min, even longer if necessary. |
