1 can (4 oz.) Green Chilies 4 Egg Whites 4 Egg Yolks 2 Tomatoes (sliced thin) 1 lb. Cheddar Cheese (chopped *not* sharp cheese) |
1 lb. Monterey Jack Cheese (grated) 2/3 C. Evaporated Milk 1/2 tsp. Salt 1 T. Flour 1/4 tsp. Pepper |

Preheat oven to 325 degrees. Combine cheeses and chilies. Turn into well-buttered 9x12 pan. Beat egg whites until stiff, combine yolks, milk, flour, salt and pepper. Fold yolks into whites. Pour over cheese. Bake for 30 min. Add tomatoes on top. Bake for another 30 minutes. |
