2 1/2 cups flour 2 beaten eggs 1 cup mashed potatoes 1 teaspoon salt 1 teaspoon grated lemon rind Enough flour to make five cups of dough |

Make a sponge of the first six ingredients. Let it raise. Stir down and add the rest of the ingredients. Mix stiff with flour and turn out on a board and knead to a soft dough. Let it raise again. Mix down, roll and cut into doughnuts. Let raise and fry in deep fat (preferably Mazola). Drop into the hot oil after they are turned with the under side up. Sugar or glaze. |
