Crust: 2/3 c. crumbled graham crackers 1 1/2 T. sugar 1 T. margarine, softened vegetable cooking spray |
Filling: 2 oz. Neufchatel cheese, softened 1 c. nonfat cottage cheese 1/2 c. sugar 2 T. white creme de menthe 1 t. vanilla 3/4 c. nonfat egg substitute 1/2 c. crushed peppermint candies |

Instructions: |
Preheat oven to 350 degrees. Spray a 7 x 11" baking dish with vegetable cooking spray.
Crust: Combine crumbled graham crackers, sugar and margarine. Press crumb mixture evenly in bottom of baking dish. Bake 5 minutes. Cool on wire rack.
Filling: Process both cheeses, sugar, creme de menthe and vanilla in food processor until smooth. Add egg substitute. Process just until blended; pour over crust. Bake 25 to 28 minutes until almost set. Cool 45 minutes on wire rack. Chill and cover 6 hours. Sprinkle with crushed peppermint candies over top of cheesecake. |
