1 c. cooked macaroni Salt and pepper 1 c. grated Cheddar cheese 1 T. minced onion 1 T. minced parsley 1 pimento, chopped |
1 c. fresh bread crumbs 1/4 t. salt 1/4 t. pepper 3 egg yolks 1 1/2 c. hot milk 3 egg whites |

Put 1 cup cooked macaroni in buttered casserole. Sprinkle with salt and pepper. Mix 1 cup grated Cheddar cheese with 1 tablespoon minced onion, minced parsley, and fresh bread crumbs; season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Put on top of macaroni. Beat 3 egg yolks until light; pour on top of the cheese mixture, then pour 1 1/2 cups hot milk over the yolks. Beat egg whites until stiff. Put on top of casserole and fold in with a gentle hand until everything is well distributed. But be sure to use an easy hand. Bake in a preheated 350 degree oven until set, approximately 45 minutes. |
