1 sweet onion, chopped 1/2 c. butter 1 (8.5 oz.) pkg. corn muffin mix 1 egg 1/3 c. milk |
1 c. cream corn (small can) 4 drops of Tabasco 1 c. sour cream 1/2 t. salt 1 c. grated sharp Cheddar cheese |

Saute onions in butter; allow to cool. Combine milk, egg, corn meal mix, Tabasco, and corn. Pour into greased 7x11x2 inch pan. To the cooled onions, add sour cream, 1/2 cup grated cheese, and salt. Spread over corn meal mixture. Sprinkle remaining cheese over top. Bake at 425 degrees for 20 to 25 minutes. Allow to cool 10 minutes before cutting and serving. |
