Ingredients:
9 uncooked lasagna noodles
2 lb. fresh asparagus
1 Tbsp olive oil
1/2 tsp lemon pepper seasoning salt
6 Tbsp butter or margarine
1/2 C all-purpose flour
2 - 14 oz cans chicken broth
1 C milk
4 tsp fresh marjoram or 1 tsp dried
2 C cooked chicken, diced
1/2 C roasted red bell peppers, chopped
1 C Parmesan cheese
3 C shredded mozzarella cheese
Cooking Instructions:
Heat oven to 350 degrees. Grease a 13x9x2 inch baking dish. Cook and drain noodles according to package directions. Heat 4 cups water to boiling. Break off tough ends of asparagus, then cut into 1 inch lengths. Place asparagus into boiling water and cook 3-4 minutes. Drain. Place asparagus in bowl with olive oil and lemon pepper seasoning salt, mix until coated. Melt butter in 2-quart saucepan. Stir in flour. Stirring constantly, cook until bubbly. Stir in broth, milk and marjoram. Stirring constantly, heat mixture to boiling. Stir in diced chicken, roasted bell peppers and 3/4 cup Parmesan cheese. Cook until heated through.

Spread about 3/4 cup of sauce mixture in bottom of casserole. Top with 3 lasagna noodles, 1 3/4 cup chicken mixture, half the asparagus and half the mozzarella cheese. Repeat layers. Top with last 3 noodles, remaining chicken mixture, and 1/4 cup of Parmesan cheese. Bake uncovered 40-45 minutes or until heated through and bubbling around the edges. Let stand 10 minutes before cutting.
Serving Suggestions:
Excellent served with a Caesar salad and hot crusty french rolls.
Additional Comments:
This sounds more complicated than it actually is. It goes together pretty quickly and easily.
