1 can tuna 1/4 c. minced roasted red peppers (bottled) 1 large hard boiled egg, minced 1 hot cherry pepper, seeded and minced 2 tbsp. mayonnaise |
1 tsp. fresh lemon juice Pinch ground cumin Two 5-inch soft Italian rolls, split 1/2 sm. red onion, thinly sliced 4 sliced Swiss Cheese 2 tsp. olive oil |

Combine tuna, roasted peppers, egg, and cherry pepper. Whisk together mayonnaise, lemon juice, and cumin. Combine with tuna, season with salt and pepper. Divide tuna mixture between the two rolls, top each with onion and cheese, replace top of roll. Cook sandwiches in oil over medium heat, pressing firmly with a spatula and turning until golden brown and cheese is melted. |
