1 c. cornmeal 3 c. cold milk 1 tsp. salt 3 tsp. sugar |
1 tbsp. butter 3 eggs 1 tsp. baking powder Grated cheese 1 can Ortega brand green chilies (opt.) |

Dissolve cornmeal in milk in heavy saucepan. Stir. Simmer 3 minutes until thickened. Add salt, sugar, and butter. Stir in and cool. When cool, add eggs and baking powder. Put half of mixture in shallow baking dish, add generous layer of grated cheese. Cover with balance of mixture. Bake 45 minutes - 1 hour at 350 degrees. A layer of chilies, with seeds removed, can be added along with cheese to give an added zing, if desired. |
