Heat oil in wok or skillet; stir-fry chicken and ham for 1-2 minutes. Add scallions and green peas. Add rice; heat until hot. Season with soy sauce and salt. Make a well in the rice, pour in beaten egg. Stir and heat until the eggs are scrambled, then chop in with other ingredients. Garnish with the omelet strips. |
