Ingredients:
3 tablespoons vegetable oil
4 oz. cooked chicken, chopped
4 oz. ham, chopped
2 scallions, sliced
2 to 3 cups cold rice, cooked
1 tablespoon soy sauce
1 to 2 eggs, beaten
1/4 cup frozen peas
1 egg omelet for garnish, cut into 1/4-inch strips (opt.)
Cooking Instructions:
Heat oil in wok or skillet; stir-fry chicken and ham for 1-2 minutes. Add scallions and green peas. Add rice; heat until hot. Season with soy sauce and salt. Make a well in the rice, pour in beaten egg. Stir and heat until the eggs are scrambled, then chop in with other ingredients. Garnish with the omelet strips.
