3 cups flour 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon salt 2 teaspoons cinnamon 1/8 teaspoon cloves 1/8 teaspoon nutmeg |
2 cups sugar 4 eggs, beaten 1 cup oil 3 cups zucchini, grated with peel 1 teaspoon vanilla 1 cup walnuts, chopped 1/2 cup golden raisins |

Sift first 8 ingredients together. Set aside. Beat sugar and eggs at medium speed for 2 minutes. Slowly add 1 cup oil and beat another 2 minutes. Add zucchini, vanilla, walnuts and raisins. Fold in dry ingredients. Bake at 350 degrees for 25 to 30 minutes in muffin tins. |
