1 medium eggplant 1 onion, chopped 1 green pepper, chopped 1 zucchini, chopped 1 tomato, chopped |
2 sticks, celery, chopped 1 cup soda crackers, crushed 1 cup cheddar cheese, shredded |

Slice and blanche eggplant. Chop. Layer vegetables, crackers and cheese. Season with salt and pepper. Bake at 325 degrees covered for 1 hour, continue to bake, uncovered, until bubbly. |
