Put potatoes into a 2-quart casserole and bake at 350 degrees for 10 minutes. Add all remaining ingredients and continue baking, uncovered, for about 30 minutes. |

| If desired, 1/3 cup Parmesan mixed with 2 tablespoons chopped parsley may be sprinkled over the top for serving. |
