Saute carrots, zucchini, and onion in 4 tablespoons of the butter. Stir in 1-1/2 cups of the stuffing mix, soup, and sour cream. Turn into a greased 1-1/2-qt. casserole. Toss remaining stuffing mix with remaining 2 tablespoons butter, melted; sprinkle over casserole. Bake at 350 degrees for 30 minutes. |
