Nilla Wafer Banana Pudding Recipe
Banana pudding is an old family favorite. Who can resist homemade pudding with bananas and Nilla Wafers? You can make this dessert with instant pudding, but you have to try it with homemade vanilla pudding too. It is sooo good.
You can prepare this dessert either in a baking dish, a glass serving bowl, or individual dessert cups. This dessert needs to be eaten the same day it is prepared so make only what your family will eat at one sitting. Extra pudding can be saved to make more dessert later.
Here are the ingredients to make one large dessert:
60 to 70 vanilla wafers
1 c. sugar
3 tbsp. cornstarch
1/4 tsp. salt
2 cans evaporated milk
2 large eggs
3 tbsp. butter or margarine
1 1/2 tsp. vanilla extract
4-5 bananas, sliced
Line the bottom of your dessert dish or bowl with half of the the vanilla wafers.
In a sauce pan, combine sugar, cornstarch, and salt. Gradually stir in evaporated milk until the cornstarch is dissolved. Stir with a whisk until blended. Stir in eggs, and then add butter. Cook over medium heat, stirring constantly, until mixture thickens. Reduce the heat to low, simmer and cook 1 minute, stirring constantly. Remove the pan from heat and stir in vanilla extract. Let the pudding cool for a few minutes.
Pour half of the pudding on top of the vanilla wafers. Place half of sliced bananas on top of the pudding. Layer remaining vanilla wafers, bananas, and pudding.
Refrigerate for 1 to 2 hours. Top with whipped cream or Cool Whip.
