Chocolate Zucchini Bread

Summer is over, and fall is here! It's time to clean out the garden once again. A friend of mine planted zucchini along one whole side of her house. Needless to say, she is still harvesting zucchini.


My friend was happy to share her excess zucchini with me (one's freezer DOES get full at some point!), so now I am peeling, shredding, and freezing zucchini.

I have been searching for and experimenting with zucchini bread recipes. We have a church bake sale coming up and I want to use some of this zucchini to make different kinds of zucchini bread to sell at the bake sale.

I got some more zucchini today, and as I was looking at all of it, my two-year-old son told me that he wanted "chocolate cake". I got to looking at all the zucchini on my kitchen counter and thought to myself, "chocolate zucchini bread"!

Here is a great recipe for chocolate zucchini bread. I'm not kidding, you can't taste OR see the zucchini in the finished bread. My kids loved it, it was a big hit. You can use either white or brown sugar in the recipe. I used brown sugar. I was going to let the kids eat one loaf and freeze the other for later, but the first loaf is almost gone. They informed me they would be eating the other loaf tomorrow.

Chocolate Zucchini Bread

3 eggs
1 c. vegetable oil
2 c. white or brown sugar
1 tbsp. vanilla extract
2 c. zucchini, peeled and shredded
2 1/2 c. flour
1/2 c. baking cocoa
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. baking powder

chocolate zucchini breadIn a mixing bowl, beat together eggs, vegetable oil, white or brown sugar, and vanilla. Stir in shredded zucchini. (You don't have to peel the zucchini. It is a matter of preference.) Combine dry ingredients in a separate bowl, then stir dry ingredients into zucchini mixture. Pour zucchini mixture into two greased and floured 8x4x3-inch loaf pans. Bake at 350 degrees F for 1 hour. Cool bread in the pans for 10 minutes, and then cool completely on a wire rack.

Note: Zucchini bread freezes very well. I plan to freeze loaves in advance for the bake sale and take them out of the freezer right before the bake sale. I saw at Walmart that they have mini loaf pans that would be perfect for selling at a bake sale or for giving as holiday gifts to family and friends.
