You come home late or the day has gotten away from you & the
dinner hour is upon you. What to do? Go out. A resounding no!
Make one of these hearty, hot sandwiches that can satisfy even
the men in your family. Add some coleslaw or broccoli slaw, and
some chips for a perfectly acceptable mid-week meal.
HOT PESTO CHICKEN SANDWICH
1. Pound boneless, skinless chicken breast pieces to about 1/4
inch thickness.
2. Saute chicken pieces in a little bit of olive oil and minced
garlic until cooked through -- this doesn't take very long.
3. Toast ciabatta bread; spread lightly with bottled pesto sauce.
4. Place grated or sliced mozzarella cheese on pesto and broil
until melted and slightly browned.
5. Place chicken pieces on top and top with ciabatta bread.
This is really easy and delicious.
REUBEN OR RACHEL SANDWICH
A Reuben is made with pastrami slices and a Rachel is made with
sliced chicken or turkey.
1. Simply heat meat slices in a little water on the stove; drain
on paper towel.
2. Heat a can of sauerkraut.
3. Toast ciabatta or rye bread; add sliced swiss cheese and broil
until melted and the edges are browned.
4. Spread Thousand Island dressing on the toasted bread &
assemble your sandwich ingredients.
MEATBALL SUB SANDWICH
Use ready-made meatballs or follow this simple recipe.
Make these ahead for added ease and heat before serving.
1/4 to 1/3 cup chopped green onions, based on your family's
tastes
1/4 cup Italian seasoned bread crumbs
2 T. grated parmesan cheese
1/2 cup grated mozzarella cheese
1 lb. lean ground beef (my family prefers ground chicken or
turkey and it's a leaner choice)
1. In a bowl, mix all ingredients.
2. Shape into 1-inch balls and place on shallow baking pan.
3. Bake at 400 degrees for 15 - 20 minutes or cooked through and
lightly browned. This makes about a dozen meatballs.
4. Spread butter on ciabatta bread or hoagie roll and broil until
golden.
5. Heat a jar of your favorite spaghetti sauce.
6. Assemble sandwich ingredients: roll, meatballs covered in
spaghetti sauce. Top with parmesan cheese.
All yummy sandwiches!
