Three Easy Rice Dishes to Make

Running out of ideas for easy side dishes to serve your family for dinner? These easy rice dishes make a delicious accompaniment to any meal. Keep the ingredients on hand so you can throw them together when you're in a hurry. Your family will love them.

Artichoke Rice Salad

1 pkg. Herb Rice-a-Roni
1/2 green pepper, seeded and diced
2 (6 oz.) jars or 2 cups marinated artichoke hearts
1 tsp. curry powder
4 green onions or scallions, sliced thin
12 pimento stuffed green olives, sliced (optional)
1/3 cup mayonnaise

Bring 2 1/2 cups water to boil. Add Rice-a-Roni and seasoning packet. Simmer 20 minutes until rice is tender. Turn into a large bowl and allow to cool. Fluff with a fork. Add onions, olives, and green peppers. Cut artichoke hearts in half (the long way). Add to rice. Use 1/2 cup of the reserved marinade, mix with mayo and curry powder. Blend to a smooth dressing and pour over rice. Stir lightly, chill.

Baked Rice and Cheese

3 eggs
1 1/2 c. cooked rice
3 canned pimento, chopped
1 1/2 c. grated American cheese
3 c. milk
1/2 tsp. salt
1/8 tsp. pepper
1/8 tsp. paprika
1/3 c. dry bread crumbs

Beat eggs and add next 7 ingredients. Pour into buttered baking dish; cover with crumbs. Dot with butter and bake in slow oven (300 degrees) for 45 minutes or until firm. Serves 6.

Mushroom Rice

1 large onion, chopped
1/2 c. butter
2 cups long-grain rice, uncooked
2 cans onion soup
1 large can mushrooms, chopped or sliced (optional)
2 cups liquid-mushroom juice plus water or chicken broth

Saute onion in butter until soft. Add remaining ingredients. Cook in covered casserole at 350 degrees for 45 minutes.
