Tasty and Inexpensive Turkey Casserole Recipes

It seems we all are trying to save time and money. Here are a couple of perfect old-fashioned family recipes to help you do both. Both of these recipes are perfect for families on a budget, busy cooks, and they are easy enough for the beginning cook to do easily. Turkey 'N Dressing Skillet Dinner combines turkey, stuffing, vegetables, etc., all in one skillet and it is table ready in less than 30 minutes. The Turkey Noodle Casserole is as the name implies. Turkey slices top noodles and cheese. This should be a hit with the kiddos as most children love pasta with cheese and they like turkey.

Turkey 'N' Dressing Skillet Meal

This recipe is on an old, yellowed, torn newspaper clipping titled 'The Cook's Corner'.

1/3 cup butter or margarine
1/2 cup shredded carrots
1/3 cup chopped onion
1 pkg. (8-oz) cornbread stuffing mix
2 cups chopped or shredded turkey
1 can (10 1/2-oz) condensed cream of chicken soup
1 cup water
1 tsp poultry seasoning
1 1/2 tsps parsley flakes

In a large skillet, melt butter or margarine over medium-low heat. Add carrots and onion; saute until carrots are tender. Reduce heat to low. Stir in the stuffing mix and the turkey. In a medium mixing bowl, combine the soup, water, and poultry seasoning; mix with a fork or wire whisk to blend. Add the soup mixture to the skillet and stir to mix well. Heat through, uncovered, for about 10 to 15 minutes, stirring occasionally until done. Reduce heat to lowest setting to keep warm for serving as this dish is best served warm.

Note: One package of herb seasoned stuffing mix can be substituted for the cornbread stuffing mix. Omit the poultry seasoning.

Turkey Noodle Casserole

2 cups cooked, drained noodles
1 tbsp margarine, melted
5 tbsp grated Parmesan cheese
4 to 5 slices cooked turkey
1 cup milk
1 cup shredded Cheddar cheese

Mix noodles, margarine, and half of the Parmesan cheese. Pour into a greased baking dish. Top mixture with turkey slices. In saucepan, heat milk and Cheddar cheese until cheese melts. Pour over turkey and top with remaining Parmesan. Bake at 350 degrees for 40 minutes.
