Gooey Monster Eye Cookies

These monster eye cookies are a fun treat for Halloween. All you need is a cake mix and some candy eyeballs, and you can have these cute creative cookies made in less than an hour.


  • 1 cake mix
  • 1 stick (1/2 c.) butter or margarine
  • 1 8-oz. package cream cheese, softened
  • 1 egg
  • Food coloring (optional)
  • Sprinkles (optional)
  • Candy eyeballs*

*You should be able to find candy eyeballs at any store that carries cookie and cake decorating supplies.

Beat together butter or margarine, egg, and cream cheese.

Mix in cake mix. At this point you can add the food coloring if you would like to change the color of the cookies. I used a funfetti cake mix so I decided not to change the color, but you could color the batter any color you wish, or even divide it up into several bowls and use several different colors.

Roll dough into 1-inch balls, and roll in sprinkles if desired.

Bake at 350 degrees for 12 minutes or until bottoms of cookies are golden brown. Remove cookies from oven and add the candy eyeballs.
