Holiday Peanut Butter Toffee
This is a fun holiday toffee recipe. Did you know you can make toffee out of saltine crackers? I was definitely skeptical but decided to give it a try. I've seen several different recipes using saltine crackers. The recipe I tried is the peanut butter variation. If you are looking for a more traditional toffee, then try this recipe.
To make this easy toffee recipe you will need:
- 1 "sleeve" saltine crackers
- 1 c. brown sugar
- 1 c. butter
- 2 1/2 c. chocolate chips
- 1/3 c. peanut butter
- Red and green M&M's
Preheat oven to 400 degrees. Line a rimmed cookie sheet or jelly roll pan with parchment paper. Arrange a layer of saltine crackers on the parchment paper, completely covering the bottom of the cookie sheet with crackers.
In a sauce pan, bring the butter and brown sugar to a boil, and boil for 3 minutes. Do not stir while the mixture is boiling.
Pour the butter and sugar mixture over the crackers and place the pan in the oven for 5 minutes.
Place the peanut butter on top of the crackers in several spoonfuls and place the pan in the oven for a minute to soften the peanut butter. Spread the peanut butter evenly over the crackers.
Sprinkle chocolate chips on top and place the pan in the oven for another minute. Use a spatula to spread melted chocolate chips out over peanut butter.
Chop M&M's into small pieces and sprinkle on top of melted chocolate chips. Place pan in freezer for about an hour to get chocolate to set. Break candy into bite sized pieces.
I made this for a family holiday get together and it was a big hit. No one knows there is saltine crackers in it! It is really good and very easy to make.
