Crispy Parmesan Asparagus Spears

I love fresh asparagus. I am always looking for new ways to eat it. Unfortunately, my family is not a huge fan of asparagus. I still haven't quite won over my kids, but my husband enjoyed this recipe. What isn't good with parmesan cheese on it!?

asparagus parmesanIngredients:

20 spears fresh asparagus
1/4 cup grated parmesan cheese
1 cup seasoned bread crumbs
1 egg, slightly beaten*
1 tbsp olive oil**
Salt and pepper

I found the idea for this recipe on the How Sweet It Is web site. I thought it was worth a try. I have included the Weight Watchers Points Plus value for this recipe below.

Wash asparagus spears and cut off the tough ends. Set out two pie pans and in one pie pan place the beaten egg, and in the other pie pan place the seasoned bread crumbs and grated parmesan cheese.

Heat oven to 425 degrees and prepare cookie sheet by placing a sheet of aluminum foil on it to aid in clean up.

Gently dry off asparagus spears so that the egg and bread crumbs will stick to them. Roll each asparagus spear first in beaten egg and then in parmesan cheese and bread crumb mixture. Place on cookie sheet. After all asparagus spears are arranged on cookie sheet, drizzle with olive oil. Season with salt and pepper.

Bake for 15 minutes. Serve immediately, these will cool off quickly.

Servings = 5. 1 serving = 5 asparagus spears. Weight Watchers Point Plus = 4 per serving.

*Note: You can remove 1 Points Plus point per serving by using 2 egg whites instead of 1 whole egg.

**Note: You can remove 1 Points Plus point per serving by not using the olive oil.
