Bacon Wrapped Meatloaf

I have been looking for a good meatloaf recipe, and I finally tried this bacon wrapped meatloaf courtesy of the Pioneer Woman. This recipe is my adapted version. My family are reluctant meatloaf eaters, but they really enjoyed this recipe. This is a great meal for bacon lovers.

Bacon Wrapped Meatloaf

Ingredients:

1 c. milk
6 slices bread
2 lbs. ground beef
1 c. grated Parmesan cheese
1 tsp. salt
Pepper (to taste)
1/3 c. parsley, chopped
4 eggs, beaten
10 slices bacon

 

Sauce:

1-1/2 c. ketchup
1/3 c. brown sugar
1 tsp. dry mustard
Tabasco sauce (optional)

 

Instructions:

Preheat your oven to 350 degrees. Place the slices of bread in a bowl and pour the milk over the bread. Let the bread set for a couple of minutes to soak up the milk.

 

In a large mixing bowl, place the ground beef, milk-soaked bread, Parmesan cheese, salt and pepper, parsley, and eggs. Use your hands to mix the ingredients together until well combined. Form the mixture into the shape of a loaf and place on a broiler pan (the broiler pan will let the grease drain off the meat).

 

Lay the bacon slices on top of the meatloaf, tucking each piece underneath the bottom of the meatloaf.

 

Prepare the sauce by mixing together the ketchup, brown sugar, mustard, and hot sauce. Stir together and pour about half of it on top of the meatloaf. Bake the meatloaf for 45 minutes and place the remaining sauce on top of the meatloaf, spreading it out with a spoon if necessary. Bake another 15 minutes.
