It is really easy to make homemade cream of broccoli soup. I have made up my own recipe, so these measurements are approximate. You will want to adjust the ingredients to suit your family's tastes.
Cream of Broccoli Soup
Serves 4
Ingredients:
3 c. broccoli, chopped
1 c. onion, chopped
2 tbsp. butter or margarine
2 c. water
2 c. milk
2 tbsp. flour
1 c. grated cheddar cheese (opt.)
Salt and pepper
In a large saucepan, melt the butter and cook the onion until it is soft. Add the broccoli and water and cook until broccoli is soft. You can add some chicken bouillion to the water, if you want to, to add more flavor.
After the broccoli is soft, I use a potato masher to lightly mash the broccoli and onions in the pan.
In a separate bowl, mix the flour with about 1/2 c. water, and then stir the flour mixture into the broccoli mixture. The flour mixture will thicken the soup. Let the soup simmer for a few minutes. If it is not thick enough, you can add more flour until it reaches the desired consistency.
Stir in grated cheese (optional) until melted. You can also stir in a little more butter for more flavor, if desired.
If you don't like chunks of broccoli in your soup, you can place the soup in the blender to puree it. This soup is great for toddlers who don't
like to eat vegetables. I have also added carrots and cauliflower to this soup and pureed it. Kids love it.
This soup also freezes well. I just bought a huge bag of broccoli on sale, so I will make up a large batch of soup and freeze it for later. For young children you can freeze toddler sized portions in ice cube trays and then transfer to ziploc bags.
