Easy Roasted Chicken and Red Potatoes

I have been looking for some easy, healthy dinner recipes, and I found this recipe for roasted garlic chicken with red potatoes. It looked really easy and the author claims it costs less than $5 to make. I decided to test it out on my family.

Ingredients:

roasted chicken and potatoes6 frozen chicken tenderloins (approx. 14 oz.)
5 medium red potatoes (diced, no need to peel)
1 tbsp. olive oil
1 tbsp. balsamic vinegar
3 garlic cloves
Salt and pepper

Preheat oven to 400 degrees. Coat a 13x9-inch baking pan with cooking spray.

Arrange frozen chicken in prepared baking pan, and add red potatoes.

Chop the garlic cloves and sprinkle on top of chicken and potatoes. Drizzle olive oil and balsamic vinegar over all. Season with salt and pepper.

Bake approximately 40 minutes until potatoes are browned.

If you are a fan of red potatoes, you will love this dish. The garlic gives them a lot of flavor. This dish is very easy to make...although it takes a little while to bake it only takes a few minutes to prepare it before putting it in the oven.

Servings = 4. Weight Watchers Points Plus = 8 points per serving.
