These funfetti cookies are really cute and fun to make. Kids love anything with sprinkles in it! Some of the recipes I have seen for these use funfetti cake mix, but these cookies are from scratch. Thanks to Tasty Kitchen for the inspiration!

funfetti cookiesIngredients:

1 c. butter or margarine, room temperature
1 1/4 c. sugar
2 tsp. vanilla extract
1 tsp. almond extract
1 egg
2 1/2 c. flour
1/4 c. cornstarch
3/4 tsp. baking soda
1/2 tsp. salt
1/2 c. rainbow sprinkles

Preheat the oven to 375ºF.

Cream the butter and sugar for about 2 minutes, until fluffy. Add the vanilla, almond extract, and egg. Beat until well combined.

In a another bowl, sift together flour, cornstarch, baking soda, and salt. Slowly stir the flour mixture into the butter mixture. Stir in the sprinkles until just combined.

Shape cookie dough into small balls and place onto ungreased cookie sheets about 1 1/2 inches apart. Bake for about 9 minutes, until just beginning to brown. Cool on waxed paper.

These cookies have great flavor. The almond and vanilla extracts give them the same flavor as my Christmas sugar cookies. Yum!
