I love making homemade mixes. I have a whole shelf full of them now, and I use them all the time. My brownie mix is one of our favorites. One mix I had never gotten around to making is muffin mix. I thought it would be great to have an easy muffin mix for when I want to make muffins in a hurry.
Muffin Mix Recipe
- 8 c. flour*
- 3 c. sugar
- 3 tbsp. baking powder
- 2 tsp. salt
- 1 tbsp. cinnamon
*You can substitute wheat flour for the white flour if you like, or substitute part of the white flour with another kind of flour. In my mix I used 6 c. white flour and 2 c. oat flour. If you are wanting to make a gluten free muffin mix, then substitute your favorite gluten free flour blend instead. Just make sure it doesn't already have baking powder added to it.
Mix all the ingredients together and store in an airtight container like this one. Make sure to mix it really well so that the ingredients are evenly distributed in the container.
- 2 3/4 c. muffin mix
- 1 egg, lightly beaten
- 1 c. milk
- 1/2 c. butter or margarine, melted
This recipe makes a basic muffin. You can customize this recipe by adding 1 cup of blueberries, chopped apples, cranberries, raisins, chocolate chips, etc.
Preheat your oven to 400 degrees. Stir all ingredients together in a bowl until blended. Fill muffin tins 2/3 full and bake for about 20 minutes, or until a toothpick comes out clean.
