Pepperoni Pizza Potato Skins

I have been busy doing lots of baking and canning the past couple of months, so haven't had a lot of time to try new dinner recipes. Last year sometime I saw this recipe for pepperoni pizza potatoes, and they are really good! The author was right, they are kid approved, and parent approved too.


4 or 5 baking potatoes
Grated cheese of your choice
Package of pepperoni
Salt and pepper
Olive oil
Parmesan Cheese
Canned or homemade pizza sauce
Store-bought or homemade Ranch Dressing

Preheat oven to 350 degrees. Scrub potatoes and prick each potato with a fork. Rub each potato with a light coating of olive oil and sprinkle with salt. Wrap each potato in aluminum foil and place in oven, directly on the middle rack of the oven.

Bake for 1 hour or until you can stick a fork or a knife through the potatoes. Remove from oven.

Remove the potatoes from the foil and cut the potatoes in half lengthwise. Scoop out the insides, leaving a thin shell.

Sprinkle a little parmesan cheese on each potato skin and return to oven until the edges start to brown.

Place a spoonful of pizza sauce in each potato skin. Fill each skin with pepperoni and grated cheese, and sprinkle more Parmesan cheese on top. Sprinkle with salt and pepper.

Bake at 400 degrees for about 15 minutes or until cheese is completely melted and potato skins are browned.

Serve these with sour cream or ranch dressing. You can also serve with black olives or chopped green onions.
