I recently ran across this great recipe for pepperoni pizza quesadillas. My kids love chicken and cheese quesadillas, so I thought this would be a fun recipe to try.

pizza quesadillasThese pizza quesadillas are really easy to make. We made them with pepperoni, but you could make them with any pizza topping. Next time I will add mushrooms and olives to the pepperoni for my husband, and for my kids I will try Canadian bacon and pineapple. Yum!

This recipe serves 4.

Ingredients:

  • 8 flour tortillas
  • 8 ounces of shredded mozzarella or monterey jack cheese
  • 1 package pepperoni slices
  • 1 16-ounce jar pizza sauce*

*You can use store-bought pizza sauce or make your own pizza sauce. It is really easy and only requires a few ingredients you probably already have on hand!

Preheat skillet over medium heat.

Brush each tortilla with a very thin layer of pizza sauce (you don't want it running out the sides).

Sprinkle cheese on top of the sauce on a tortilla. Add other toppings, and place another tortilla on top.

Lay quesadilla in skillet and cook for 3-5 minutes on each side, until cheese is melted and tortillas are crispy.

Slice each quesadilla into fourths (a pizza cutter works great for this) and serve with pizza sauce.

By the way, my family LOVED these! They would also make a great afternoon snack.
