This is a great bar cookie recipe to make when you need to take a treat somewhere with you. And everyone loves them. They were popular back in the 1970's and are still popular today. The best part about them is that they are easy to make.

Traditionally these cookies are made with Rice Krispies, but you can also make them with Cheerios and they are just as good. Use whatever you have.

  • 1 c. corn syrup
  • 1 c. sugar
  • 1 c. peanut butter
  • 1 c. Rice Krispies or Cheerios
  • 2 c. chocolate chips

In a large sauce pan, combine corn syrup and sugar. Heat until sugar is dissolved and mixture starts to boil.

Remove from heat and stir in peanut butter. When the peanut butter is melted, stir in the cereal.

Press cereal mixture into a buttered 13x9x2-inch baking dish.

While the cookies are cooling, place the chocolate chips in a microwave safe bowl and microwave for 30 seconds. Stir and microwave for 30 more seconds. Stir again and continue heating and stirring until chocolate chips are melted.

Spread the melted chocolate chips over the bar cookies. Let the cookies set until the chocolate re-hardens. You can place them in the refrigerator to speed up the process. If you do refrigerate them, take them out at least an hour before you want to cut them or they will be too hard to cut (ask me how I know!).
