Wild Rose Infused Honey

I love this time of year when I can go to the mountains and pick wild roses. Wild roses have many uses. I have been experimenting with a variety of recipes using wild rose petals. If you like this recipe for wild rose infused honey you might try my rose petal iced tea and rose petal jelly.


Harvesting Wild Roses

When you are harvesting wild roses, there are some things you need to keep in mind. Make sure that the rose petals that you are collecting have not been sprayed with any kind of pesticides. If you are not sure, then don't take the chance on them.

When you are looking for a good place to pick roses, look for an area that has lots of roses to choose from. You don't want to clear an area of roses. Make sure to leave some for the bees and for other people to enjoy. I pick a handful from one bush and then move on to the next.

You'll find that wild roses come in a variety of colors. I've seen ones from light shades of pink to a bright fuschia. They should all give you the same results when you make your infused honey.

Preparing the Rose Petals

To prepare the rose petals for this recipe, place them in a colander or fine mesh strainer and gently spray them with water to make sure any dirt, debris, or insects are washed away.

Preparing the Honey

Ingredients:

  • Jar with lid
  • Honey
  • Rose petals

You can use any jar with a lid to prepare this recipe. I used a pint sized canning jar.

You will need enough honey to fill the jar. If you are using a pint jar you will need 2 cups of honey. If the honey is too thick, you can microwave it for a minute so that it is a pourable consistency.

Fill the jar with rose petals, and then pour the honey over the petals. Leave the rose petals in the jar for about a week. If you like you can just leave them in there, but it will be easier to use the honey if you remove them. Just pour the honey through a fine mesh strainer to remove the rose petals and return the honey to the jar.

You do not need to can this recipe, honey is shelf stable and can be stored in your cupboard for years without any special treatment. This is a fun recipe to make as a gift for family or friends and a great way to enjoy the wild roses of summer.
